CHOCOLATE. It’s the food that makes most women very, very content. In small amounts – with healthy ingredients – it can feed your brain, enhance  your health, and satisfy your cravings. So, make the most of your pre-determined “fun calories” and take your occasional chocolate indulgence to the next level nutritionally with this easy recipe.

Oh…and YES…we did have fun making, tasting, and playing in the chocolate! We even shared some of our bloopers at the end of the show – because like most of our recipes – we are a work in progress. But – they all end up tasting great in the end and we have a lot of fun in the process. We hope you do, too!

Chocolate Bliss Truffles

Single Recipe Ingredients:

  • 1 Cup Coconut Oil (warmed to liquid state)
  • 1/3 – 1/2  Cup Raw Honey  ( depending how sweet you want it – we like better with 1/3 cup)
  • 2 teaspoons Pure Vanilla Extract
  • 1/4 teaspoon Sea Salt
  • 1 Cup Dried Shredded Unsweetened Coconut
  • 3/4 – 1 Cup of Cocoa Powder

Flavor Option: Essential Oils can add a wonderful variety of flavors.  Add 3-5 drops Wild Orange, Tangerine or Peppermint. You can separate the batch in half and to make two flavors.

Directions:

In a large bowl blend (by hand is simplest,  the warmed coconut oil, honey, vanilla, and salt. Add the shredded coconut, 1/2 cup at a time, and blend until smooth.  (oil will separate)

Stir the cocoa powder until thoroughly combined. (adjust your cocoa powder so that your batter is the consistency of a loose brownie batter)  Set in fridge for 5 minutes to set up a bit then stir until well combined.

Pour the batter into a baking pan (best to line the pan with parchment or wax paper) to slice into squares after refrigerating or place the bowl of batter in the refrigerator for about 10 more minutes to firm up enough to make balls.  Spoon 2-3 teaspoons of the chocolate mixture on to your hand and roll them into a ball. Roll balls in cocoa powder.

Makes about 20 – one ounce pieces / Calories: 130 per ounce
