CHICKEN SAUSAGE ZUCCA

Ingredients:

  • 2 Medium Zucchini
  • 2 Fully-Cooked Italian Chicken or Turkey Sausage
  • 1 Cup Sliced Mushrooms (optional)
  • 1 Tablespoon Extra Virgin Coconut Oil
  • 1-2 Tablespoons sliced sun dried tomatoes
  • 1/4 teaspoon salt
  • 1/4 teaspoon granulated garlic
  • 1/2 teaspoon dried Italian seasoning
  • 1/4 cup canned coconut milk
  • 2 cubes frozen basil or fresh basil
  • Optional Spaghetti Sauce or Tomato sauce

Directions:

Spiralize Zucchini into long noodle strands or use a vegetable peeler to make wider noodles.  Slice sausage into pieces. Melt Coconut in saute pan and add zucchini, sausage, mushrooms, salt, garlic and Italian seasoning cook until mushrooms are tender.  Add sun dried tomatoes, basil and coconut milk and cook until heated through.
