Busy Woman Roasted Chicken Recipe #3

Thai Chicken Stir Fry


  • 1/2 Roasted Chicken
  • 1 Package of Tiger Tiger Thai Red Curry
  • 1 Package Green Giant Pre-Chopped Cauliflower/Broccoli/Onion Mix
  • 1 Package Pre-Shredded Carrots
  • 2-3 TB Coconut Oil
  • Salt & Pepper to Taste
  • Optional: Add any other veggies you like such as mushrooms, cabbage, zucchini

  • In a large fry pan, melt coconut oil and add raw veggies and cook to your desired texture
  • Pull 1/2 of chicken apart and shred with fork, add to veggie mixture and simply warm for 2-3 minutes
  • Add Thai curry sauce and stir into entire mixture
  • Season with salt and pepper
  • Enjoy
