This Greek Chicken is Amazing! It’s hard to believe we are using a store bought pre-roasted chicken. Use just part of the chicken or if you are preparing for the whole family use the whole thing. The most convenient part is that you can buy the pre roasted bird from the store several days before and store in the fridge. It is super easy to carve up cold. This recipe literally takes less than 15 minutes and that includes the cooking time! Your tastebuds will be delighted when this chicken is transformed from ordinary to extraordinary!
Jill’s 15-Minute Greek Chicken
For Preparing Whole Chicken
- 1 Whole Roasted Chicken
- 1/2 Cup Extra Virgin olive oil
- 1/2 Cup Lemon juice ( not concentrate)
- 4 teaspoons Chopped garlic ( or more)
- 2 Tablespoons Apple Cider Vinegar
- Zest of 1 lemon
- 2 teaspoons Herbs De Provence, Italian Seasoning or any other dried green herb seasoning.
- 1/2 teaspoon salt
- Dash of pepper
Pre-heat oven to 400 degrees.
Carve up chicken in thick slices from the breast and thigh and lay in a baking dish. Add the wings and legs as well to the backing dish.
Mix up remaining ingredients in a bowl or jar that has a lid and shake well.
Sprinkle some additional dried herbs over top of chicken and pour the marinade over to cover the chicken.
Pop in the oven for about 10 minutes to heat through and greek sauce is bubbling!
Serve with a salad and/or roasted veggies and maybe a few roasted potatoes
