GRAIN FREE APPLE PANCAKES
Ingredients:
- 3 large eggs
- 1 Tablespoon coconut flour
- 2 cups shredded apple (about 3 apples)
- 1/4 teaspoon baking soda
- 1/2 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/8 teaspoon of treleafia or other natural sweetener
- Dash of salt
- 1 Tablespoon virgin coconut oil
Directions:
Using a hand grater, shred apples until you have 2 cups. Pat the shredded apples onto paper towels or a clean dish towel to absorb the moisture. Set aside.
In a mixing bowl whisk 3 eggs. Add salt, vanilla, cinnamon, baking soda and treleafia or sweetener of choice and combine. Stir in coconut flour until smooth. Add Shredded apples until combined into batter.
On a skillet or frying pan melt coconut oil over medium heat. Scoop 1/4 cup portions of batter onto skillet and flatten into pancake shape. Cook for about a minute to 90 seconds until golden brown, flip and cook through on the other side.
