Busy Woman Roasted Chicken Recipe #3
Thai Chicken Stir Fry
Ingredients:
- 1/2 Roasted Chicken
- 1 Package of Tiger Tiger Thai Red Curry
- 1 Package Green Giant Pre-Chopped Cauliflower/Broccoli/Onion Mix
- 1 Package Pre-Shredded Carrots
- 2-3 TB Coconut Oil
- Salt & Pepper to Taste
- Optional: Add any other veggies you like such as mushrooms, cabbage, zucchini

Directions:
- In a large fry pan, melt coconut oil and add raw veggies and cook to your desired texture
- Pull 1/2 of chicken apart and shred with fork, add to veggie mixture and simply warm for 2-3 minutes
- Add Thai curry sauce and stir into entire mixture
- Season with salt and pepper
- Enjoy
