Healthy Peanut Butter Chocolate Meltaways
Ingredients:
1/2 Cup Extra Virgin Coconut Oil (melted)
1/2 Cup Unsweetened Cocoa Powder (organic)
1/2 Cup Organic Valencia Peanut Butter (you can substitute almond or sunflower seed butter)
2-3 TB. Raw Organic Honey or Pure Maple Syrup
Dash of Sea Salt (no more than 1/8 Tsp.)
Option: Cut the honey or maple syrup to half the amount and bump up your sweetness with Monk Fruit Pure Extract or liquid Monk Fruit Sweetener
Directions:
Combine coconut oil and cocoa in a small bowl and stir until smooth
Combine softened nut butter, 2 TB honey or maple syrup, and salt in another bowl and stir until smooth
Mix all the ingredients together.
Taste to determine if you want to add another tablespoon of honey, maple or monk fruit.
Pour mixture into an 8×8 pan lined in parchment paper
Place uncovered in freezer for 10-20 minutes
Slip out of container and cut into squares
Store in an air tight container in freezer
Eat no more than once ounce (150 calories) per day!
