These lite and fluffy egg bites will give your local coffee shop a run for their money! They are easy and delicious. You can customize them to your taste by adding a variety of healthy ingredients that you love.
Instant Pot Egg Bites Recipe
Ingredients:
- 4 eggs
- 1/2 cup shredded pepper jack cheese plus 2 tablespoons for topping.
- 1/2 cup cottage cheese
- 1/4 cup diced green chilis, drained (for spicier use diced jalapeno)
- Chicken/Turkey Sausage diced
- Dash of salt
Directions:
- Add 1 cup of water to Instant Pot
- Add 4 eggs and cottage cheese to blender with a dash of salt and blend for 30 seconds
- Stir in ½ cup of shredded cheese, diced green chilis and diced sausage to egg mixture
- Place silicone mold on Instant pot trivet and add mixture evenly to sections of mold Keep stirring so that the you get an even amount of the chunkier stuff in each mold
- Top each section with the extra shredded cheese
- Cover and seal with foil
- Place trivet in instant pot.
- Place lid on instant pot and set vent to sealed position
- Press Steam button and set time for 10 minutes. (It takes about 5 minutes to heat up.)
- Once the cooking time is done, allow for natural release for 10 minutes, then release any other pressure before opening instant pot.
- Remove trivet and foil and allow to cool for a few minutes.
- Loosen each egg bite by popping it up from the bottom before flipping onto a plate.
