Skinny Pizza Crust Ingredients:
4 Cups Raw Cauliflower
1 Egg Beaten
1/3 cup chevre goat cheese or ricotta cheese
1 tsp Italian seasoning mix or dried oregano
2-3 pinches salt
Directions:
Preheat oven to 400 degrees F.
Take your head of washed cauliflower, trim off the stems and cut or break it up into chunks. Add 1/2 of it to your food processor and using the S blade, pulse it several times until it becomes rice size. (It actually looks like couscous). Move this batch to a microwave safe dish and repeat the process with the other 1/2 of the cauliflower chunks. Cook the cauliflower rice in the microwave on high for 8 minutes. This is the easiest method. Alternatively, if you don’t use a microwave you can boil a pot of water, add the cauliflower rice, cover the pot and let it cook for about 4-5 minutes and drain in a fine mesh strainer.
Allow to cool a bit before the next step:
Transfer the cauliflower to a clean thin dishcloth or cheesecloth. Twist up the cloth and squeeze out as much liquid as you can possibly can, you may think it’s all out, but squeeze again and more will still come out! ( watch video above). Take the rice and pat it onto a paper towel to get the last bit of moisture out. Place the cauliflower in a mixing bowl and add the egg, cheese, herbs and salt and thoroughly combine. Place parchment paper onto a baking sheet and press your dough onto it into the shape that you like keeping the dough about 1/3 inch thick.
Bake the crust for approx 35-40 minutes until it is golden brown. Remove from the oven and add your sauce and toppings of choice (see below) and then back in the oven for another 5-10 minutes until bubbling. You can turn on the broiler for the last minute or so, just make sure you watch it closely so it doesn’t burn! Remove from oven and let cool a few minutes before slicing up to serve!
Topping Suggestions:
Tomato or spaghetti sauce (spread on a super light layer or it will weigh your pizza down)
Brush on a tiny amount of avocado oil
Any variety of cheeses
Kalmata olives, Sun-dried tomatoes, roasted garlic, fresh or roasted peppers, mushrooms, onions.
Turkey or Chicken sausage
Fresh Basil
Any of your favorite toppings not mentioned!
