Cottage cheese is making a comeback!

It’s become a big trend as a key ingredient in healthy recipes like this delicious, easy to make Soft Serve Creamy Treat. It’s high in protein (12 grams) and low in sugar and carbohydrates.  Cottage cheese is the main ingredient, along with strawberries and  monk fruit extract for natural no-cal sweetening.   This recipe is better if you use full fat cottage cheese as it will be creamier and not get as icy in freezer when you are quick cooling it.  Full fat cottage cheese is only 23 more calories per 1/2 cup than the low-fat.

You can use other sweeteners if you choose such as a little pure maple syrup or wild honey, but it will bring the carb/sugar content up.  The monk fruit extract alone tastes fantastic in this recipe and it does not contain any sugar alcohol.  Some people like to use a combination sweeteners such as a teaspoon of maple syrup and half the monk fruit suggested. You’ll soon discover which taste you most prefer.

You can get creative with this and try different fruits and flavors, like blueberries, peaches, or cocoa powder for chocolate.  Let us know if you have any brilliant variations!

Final tips from my trial and error: 
Don’t over freeze or the mixture will be as hard as rock.  Don’t use too much fruit contains a lot of liquid such as frozen fruits and melons. That will make it icy as well.  30-45 minutes in the freezer is best and stir it occasionally to keep it creamy.  If you do over freeze, just let it sit out and defrost and stir it up again to get it back to it’s creamy state.


1/2 Cup full fat cottage cheese

1/2 Cup sliced strawberries

2 level scoops  (about 1/8 Tsp.)  Monkfruit Extract Powder

Blend all ingredients in blender or food processor until creamy.  Transfer to a serving dish and freeze 30 – 45 minutes stirring occasionally until it reaches your desired texture.
