Tired of chicken on your health regime? This healthy turkey recipe will change things up for you. It’s crispy, full of flavor and super easy to make with just a few ingredients. Gluten and grain free as well as low carb, this recipe will fit into a healthy lifestyle! You may not have noticed turkey cutlets at your grocery store because you weren’t looking for them, but they should be pretty easy to find.

RECIPE

Ingredients:

  • 16 – 24 oz of Turkey cutlets  (If you can’t find turkey cutlets at your supermarket, you can buy a turkey tenderloin and thinly slice it for this turkey cutlet recipe.)
  • 1/3 to 1/2 Cup grated Parmesan cheese.
  • 1/4 -1/2 Cup liquid egg whites
  • 1 Tablespoon extra virgin coconut oil or avocado oil
  • Salt & pepper for seasoning
  • Garlic powder for seasoning

Optional:  Seasoning spices like herbs de Provence or cayenne pepper. I like the Trader Joe’s Mushroom Unami spice, too.

Instructions:
Set up your dredging station with all your ingredients on plates and dishes that you can use for dunking and dredging.  I don’t like to add all of my cheese at once to the dredge dish because I don’t want it to get soggy, plus I don’t want to waste any. So, I add about half of what I will use initially and add more later.

Add cooking oil to pan and turn on to medium heat.

Season cutlets with salt, pepper and garlic powder on both sides. Dunk cutlet in egg white and then dredge in Parmesan cheese on both sides. Place in warmed pan on stove on medium heat. Repeat for each cutlet. Depending on the size of your pan you may have to do a couple batches.  Don’t over crowd them.

Cover and cook with lid on for 4 minutes.  Remove lid and turn cutlet pieces over when golden brown on one side.  Then cook for at least another 4 minutes on the other side or until crispy golden brown. Depending on the sized and thickness of the cutlets you may need to cook a minute or 2 longer and/or raise your temperature.
