If you’re trying to cut back on grains and adopt a healthier diet – you will love “Chaffles” – a grain free, high protein alternative. You can make these tasty waffle/bread alternatives in a couple minutes and use them a variety of ways. From savory pizza, egg sandwich, or pesto/garlic snacks to a sweeter waffle with berries and a healthy low sugar syrup – these fun “Chaffles” will tickle your taste buds and have you making them again and again.

There are tons of different type of chaffle recipes available, this is the basic with limited ingredients.

CHAFFLES

Ingredients

  • 1 Egg
  • 1/2 cup or approx. 2 oz shredded  part skim mozzerella cheese*
  • dash of salt
  • Optional: Avocado oil for greasing waffle iron ( if your waffle iron is non-stick you can skip this step)
  • Optional: For a more bread like texture, just before spreading into your waffle iron, stir into your batter 1/2 Tablespoon psyllium husk powder and 1 Tablespoons of water.

*Don’t use pre-shredded cheese from a bag, it has cellulose and you won’t like your results. Shred your own!

Directions

These instructions are for using a mini dash, if you have a larger waffle iron you will need to make adjustments.

Lightly grease your Mini Dash and pre-heat for about 5 minutes.

To make your batter, in a small bowl with a fork whisk egg, 1/2 of the cheese and a dash of salt.

Divide your remaining cheese into 4 even piles.

When your Dash is hot and ready sprinkle one of the piles of cheese onto the base of the waffle iron, then spread 1/2 the batter into the mini Dash, sprinkle the another  pile of cheese over the top of the batter and then close the lid to cook until brown and crispy about 3-4 minutes and until it stops steaming.

Carefully remove the chaffle from the waffle maker and place on a cooling/bread rack. Repeat with remaining pile of cheese and batter.

Eat hot and by itself or add a variety of toppings such as cream cheese, avocado, almond butter etc.  Or use for a sandwich or pizza crust.
