COLD, CRUNCHY SHRMP SALAD RECIPE

INGREDIENTS:

Salad

1 Head iceberg lettuce – washed, chilled, chopped

2 Cups chilled cooked shrimp

2 Cups frozen organic peas

1 Cup chilled & rough cut water chestnuts

¼ Cup toasted, slivered or sliced almonds

Salt & Pepper to taste

Dressing

¾ Cup avocado mayonnaise

½ Cup finely chopped scallions (green and white parts)

2 Tb. Lemon juice or red wine vinegar (or combo)

Salt & Pepper to taste

Directions

Combine dressing ingredients in a small bowl or cup. Let sit for five minutes.

Combine all salad ingredients except almonds in a large salad bowl. Toss in dressing to desired wetness. Serve on plate and top with toasted almonds.
