Busy women often get overwhelmed when it comes to making nutritious dinners. Who has time? With a little advanced planning and a few healthy recipes – you can make cooking a breeze and support your health and weight loss goals at the same time.

This is the first of 3 chicken recipes for the busy woman.  You can grill the chicken in advance for all 3 recipes and either store it in the fridge or even the freezer.  Also,  we mention that we picked up this chicken at Trader Joes for a good price.  Since the original filming of this, we have found the best deal and the best tasting chicken breast are at Costco.  They are listed as Organic – Free Range Chicken and they come in divided 3 paks which are easy for storage in the freezer.

Asian Chicken Stir Fry 

Ingredients: 

2 grilled chicken breast or roasted pulled chicken
5 scallions
3-4 carrots sliced
2 cups broccoli crowns
1 cup sliced mushrooms (optional)
2 cloves garlic chopped or pressed
1/4 teaspoon white pepper
1 1/2 teaspoon ground ginger
1-2 Tablespoons Tamari ( or soy sauce)
2 tablespoons extra virgin coconut oil
Chicken Stock (optional to make more liquid for sauce)

Heat coconut oil over medium heat, add chopped garlic and cook until golden.  Add scallions, carrots & broccoli  as well as pepper and ginger to sauté. Cook for 3-5 minutes until vegetables start to get tender.  Add mushrooms to cook through. Add Tamari.  When veggies are cooked to your desired tenderness,  turn heat down to low and add chicken to warm through.  If you desire a bit more wetness,  add a little bit of chicken stock to  extend.   Serve immediately over rice or cauliflower rice.
