This yummy and healthy cauliflower recipe takes less than 5 minutes to prep and about 20 minutes to cook! It is low carb and high fiber with an awesome crunch! You can spice it up by using Spicy Nut Crumbs and adding some other seasonings or you can keep it simple as we show in this recipe.

RECIPE
Ingredients:
- 1 Medium head of cauliflower rough cut into bite-sized chunks
- 1 egg lightly beaten
- 1-2 tsp. garlic powder (to your taste preference)
- 2/3 cup Nut Crumbs of your flavor choice (Regular, Spicy, Italian)
- Salt & Pepper to taste.
- Optional: Dried herbs, cayenne pepper, chili flakes Cholula sauce on side
Directions:
Pre-heat Oven to 400°
In a large ziplock bag, toss in chucks of cauliflower. Pour beaten eggs over them, zip bag closed and shake vigorously for about 30 seconds. Sprinkle in garlic powder, salt & pepper and shake again. Toss in about 1/2 cup Nut Crumbs and give it one last shake.
Spread out on a non-stick cooking (or use parchment paper). Dust tops with the remaining Nut Crumbs and bake for 15-20 minutes. For extra crunchiness, put under broiler for 1-2 minutes watching very carefully.
