Don’t you just LOVE hash browns with your breakfast? They are so crunchy and satisfying. BUT, they also add a load of carbs that can sabotage a lean, healthy diet. This new recipe will more than satisfy you and it’s so easy to make. Yes, you probably guessed – it is grain free – and potato free. Made with riced cauliflower in a waffle maker or skillet,  you’ll be amazed at how great they taste!

Ingredients:

  • 12 oz bag frozen riced cauliflower
  • 2 eggs beaten
  • 1 cup shredded cheese of choice
  • 2 Tablespoons chopped onion
  • 1/4 teaspoon garlic powder
  • salt and pepper to taste
  • Olive, Avocado or Coconut oil spray

Directions:

In microwave or on stovetop heat cauliflower. In a colander allow to cool and drain.

Preheat your waffle iron and spray with oil.

Wrap the cauliflower in a tea towel, cheese cloth or dish towel and squeeze excess water out over the sink then place cauliflower into a medium size bowl.  Add eggs, cheese, onion and spices to cauliflower and mix well.  Spread mixture onto waffle iron evenly about 1/4 inch thick and cook until golden brown and crispy.
