If you are missing some of your favorite crackers on a grain-free or low carb lifestyle, this recipe is for you. Using some simple ingredients, you can enjoy these crispy crackers by themselves or with your favorite dip or topping!  Use the “Everything But the Bagel” seasoning as we have or try it with fresh or dried herbs such as rosemary or thyme.

Everything Grain-Free Cracker

Ingredients:

  • 2 and 1/3  cups blanched almond flour
  • 2 Tablespoons Everything But the Bagel seasoning
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 3 tablespoons butter, melted
  • 2 eggs
  • 1/2 teaspoon sea salt, or to taste

Optional:

  • Substitute: 1 Tablespoon fresh herbs or 2 Tablespoons dried herbs instead of Everything seasoning

Directions:

Preheat the oven to 375°F. Line a baking sheet with parchment paper or use a silicone baking mat.

In a large bowl, combine the almond flour, everything bagel seasoning, onion powder, garlic powder and salt to a large bowl. In a separate small bowl, combine the melted butter and eggs, beat together with a fork or whisk.

Add the wet ingredients to the dry ingredients and mix together into a dough. Chill the dough in the refrigerator to chill for 15 minutes.
Roll the dough between two pieces of parchment paper approx. 1/8 inch thick. Cut out crackers using a 2 inch round cookie cutter.  You can make them smaller if you prefer. Line the crackers in a single layer across the prepared baking sheet. Repeat this process until you use up all of the dough.

Bake for 15 minutes or until the crackers are golden in color. Watch them after 10 minutes to make sure they don’t burn. After baking allow to cool on a wire rack.

Crackers will keep in an airtight container for 5-7 days.
