Who doesn’t love the taste of crunchy fried chicken? But if you also highly value your health and want to stay lean – it’s hard to justify the unhealthy fat from deep frying and the bread crumbs or white flour used in most recipes. Well, we’ve got a solution! NUT CRUMBS & an AIR FRYER to the rescue!
- 6-10 Chicken drumsticks
- 1/4 cup of unsweetened almond milk or coconut milk
- 2 eggs
- 3 Tablespoons of Nut Crumbs per drumstick
- salt and pepper for sprinkling chicken
- Hot sauce or Buffalo sauce – optional
Sprinkle drumsticks with salt and pepper. Place Nut Crumbs on a plate. In a bowl beat eggs and almond milk and hot sauce if you want it more spicy. Coat drumstick with egg mixture and then roll into the Nut Crumbs to coat the meaty part. Place drumstick in air fryer. Place 2-3 drumsticks or 4-5 drumsticks into air fryer depending on the size of it. Don’t over crowd the chicken in the fryer. Push button for Chicken and 17-24 minutes depending on the size of your drumsticks. Wait for the air fryer to Ding!
Oven Option: If you don’t have an air fryer, you can bake in an 425 degree oven for 25 minutes, turn over and bake an additional 5-10 minutes until the both sides are crispy.
