Chocolate Coconut Macaroons

Ingredients:

3 Cups Shredded Unsweetened Coconut
½ Cup Cocoa Powder
1/3 Cup Organic Raw Honey or Pure Maple Syrup
½ Cup Full Fat Coconut Milk
½ Tsp. Cinnamon
¼ Tsp. Vanilla
1 egg white
Pinch of Sea Salt

Preheat oven to 325 degrees.

Combine all ingredients except egg whites and salt in a bowl and combine thoroughly. Beat egg whites and salt in bowl with a mixer for about 2 minutes until fluffy peaks are formed.

Fold egg white mixture into chocolate mixture and gently combine. Scoop balls of mixture using a tablespoon and pack down firmly onto a parchment paper lined cookie sheet. Bake for 30 minutes. Cool and enjoy. Makes about 22 macaroons.
