As a little girl, I remember my mom always saving our overly ripe bananas – sometimes almost black – and making the most delicious banana bread. Over the years, I’ve tried to turn her delicious tasting bread into a healthier version. Since it is common knowledge that not only gluten, but many grains are causing not only weight gain issues but significant inflammation in our bodies – I wanted to create a tasty bread that actually nourished our bodies. This recipe is the result of many experiments and I have to say it comes very close in taste to my mom’s original but it is all natural, healthy, and fully grain free. Danna’s Healthy & Grain Free Banana Bread

  • ¼ Cup Coconut Oil
  • ½ Cup Organic Raw Honey or Organic Maple Syrup
  • 2 Eggs
  • ½ teaspoon Vanilla
  • 1 ½ Cups Mashed Ripe Bananas
  • 1 1/4 Cup Cassava Flour
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • ½ Cup Pecans or Walnuts (Optional)
  • ¼ Cup Semisweet Chocolate Chips (Optional)

Pre-heat oven to 375 degrees.

Combine oil, honey or maple syrup, eggs and vanilla until creamy. Stir in mashed bananas. Add dry ingredients to mixture and mix well. Pour into a greased loaf pan. I recommend placing parchment paper at the bottom of the loaf pan so the bread slips right out.  Bake at 375 degrees for 45 – 50 minutes.
